Junior HACCP Clerk
Our client, a leading company in the food manufacturing/FMCG industry based in Kommetjie, Cape Town, is seeking a permanent HACCP Clerk to join their Quality Assurance team.
The successful candidate will be responsible for maintaining HACCP and food safety documentation, supporting quality assurance processes, ensuring regulatory compliance, and assisting with internal and external food safety audits. This opportunity is ideal for candidates with experience in food manufacturing, quality assurance, food safety, or HACCP administration.

- National Diploma or Degree in Food Technology, Food Science, Consumer Science, Food and Nutrition, Biotechnology, or a related qualification.
- HACCP certification will be advantageous.
- Minimum 2-3 years' experience in a food manufacturing, food processing, FMCG, or quality assurance environment.
- Sound knowledge of HACCP, GMP, Food Safety Management Systems, hygiene standards, and food safety legislation.
- Experience with food safety documentation, document control, traceability, and audit preparation.
- Knowledge of microbiological testing, environmental monitoring, swab sampling, temperature monitoring, pH testing, Brix testing, and shelf-life testing.
- Experience with Certificates of Analysis (COAs), product specifications, and production records.
- Knowledge of equipment calibration, including pH meters, refractometers, scales, and thermometers.
- Experience preparing for internal, external, customer, and certification audits.
- Strong administrative, organisational, and document control skills.
- Computer literacy with Microsoft Word and Excel.
- Excellent communication skills with strong attention to detail.
Key Responsibilities
- Maintain HACCP documentation, food safety records, SOPs, and quality management documentation.
- Monitor HACCP Critical Control Points (CCPs) and ensure compliance with food safety standards.
- Maintain accurate production records, traceability documentation, and quality assurance documentation.
- Verify Certificates of Analysis (COAs), product specifications, and batch documentation.
- Conduct routine food safety and quality checks, including temperature monitoring, pH testing, Brix testing, and product inspections.
- Assist with environmental monitoring, swab testing, microbial sampling, and hygiene verification.
- Maintain calibration records for quality control equipment.
- Support internal, external, customer, and certification audits by ensuring documentation is complete and audit-ready.
- Assist with mock recalls and traceability exercises.
- Monitor GMP compliance, sanitation standards, hygiene practices, and food safety procedures throughout production.
- Record and investigate non-conformances, deviations, customer complaints, and corrective actions.
- Compile food safety reports, quality trends, and compliance records.
- Support food safety training and promote a positive food safety culture within the organisation.
- Ensure compliance with company quality standards and food safety legislation.
